Do you have any old bananas that are looking a little too brown to eat?
Save them in the freezer for banana bread!
Banana bread is a delicious dessert that goes quickly! This recipe is another family favourite.
I like to use whole wheat flour in my baking as it provides a slight fibre boost compared to white flour. You can also add walnuts or pumpkins seeds for extra crunch and extra nutrition, if you prefer!
Prep: 15 minutes
Bake: 60 minutes
Yield: 1 loaf
1/3 cup butter
2/3 cup sugar
1/4 tsp vanilla
1 3/4 cup flour
1/4 tsp baking soda
2 tbsp baking powder
3 very ripe (aka brown) bananas (if frozen thaw first)
1/4 cup chocolate chips
Cooking spray or oil
Preheat oven to 350 F.
Beat butter in mixing bowl until creamy.
Add sugar gradually. Beat until light and fluffy.
Add eggs and vanilla. Mix well.
Sift dry ingredients together in separate small bowl.
Add flour mixture alternately with bananas, mix well.
Add chocolate chips if desired. Mix slightly.
Lightly coat bread pan with cooking spray or oil.
Pour mixture into bread pan.
Bake for 60 minutes or until done in the middle. (Toothpick comes out clean).
Remove from oven and let cool for 5 minutes.
Enjoy warm with a thin spread of butter or margarine. Perfect snack or dessert!
