Shish Kabobs are a simple, delicious summer time meal. Little prep, cooked on the BBQ, and you can customize it how you want!
Prep: 10 minutes
Cook: 8-10 minutes on BBQ
Yield: 4 skewers
1 bell pepper
1/4 yellow onion
1lb of beef chunks (~1")
Pre-heat BBQ to ~400 F.
Slice bell pepper, zuccini, and yellow onion into large slices (about the size of a toonie).
Slide on items to skewers. Alternate meat with each vegetable until skewer is full.
BBQ until meat is fully cooked.
Coat lightly with BBQ sauce.
Serve immediately with cooked rice or other side (like the potato salad) for a complete meal.
Other delicious veggies options are cherry tomatoes, mushrooms, or any other veggie that can hold its shape while cooked.
Other meat options are chicken or shrimp, or you can make your kabobs veggie only.
